Our honest take on a seafood classic

"Frutti di mare" means fruits of the sea, and in most pizzerias it's a crowded plate — mussels, clams, squid, whatever the boat brought in. Let's be straight with you: that's not our version. The Hawaii Frutti de Mare keeps it to four toppings that actually behave on a pizza: tuna fish, shrimps, onion and cheese. Nothing else.

There's a reason for the restraint. A thin 33cm base can't carry a pile of wet shellfish and stay crisp. Tuna gives the pizza its savoury backbone, the shrimps add a sweeter seafood note, onion cuts through both, and melted cheese holds the whole thing together. Every slice stays light, crisp and easy to eat with your hands — the way thin-crust pizza should be.

We've cooked in Side old town since 2000, the kitchen is built around a real wood fire, and ingredients come in fresh every day. That matters more on a seafood pizza than on almost anything else we serve: simple toppings only work when they're treated properly.

Who should order it — and when

Order the Frutti de Mare when half the table wants fish and the other half wants pizza. It settles that argument neatly.
